Magic Christmas Pie

This is a blender pie. Ingredients are combined and mixed with a home blender. As the coconut pie bakes, a crust forms on the bottom, the center forms a custard, and the coconut floats to the top.

Anyone who has problems making pie crusts will enjoy the ease of this fun pie recipe. Even great pie crust makers enjoy this one for the “wow” factor. It’s just pretty neat to make a pie that sorts itself out.

When the kids are home for the holidays, this recipe is simple to whip up and also is one that kids and teens like to see take shape in the oven. There’s certainly some kind of science lesson here, but the kids just think it’s fun to make magic pie.

  2. Pour into well greased 9 inch deep dish pie pan or into a 10 inch square pan.

  5. And be sure to tell everyone about the magic of the pie that divides itself as it bakes.

Another favorite Southern pie is Pecan Pie. Although many Southern cooks place the nuts on top, the pecans can be stirred in the batter. The nuts come to the top just like the coconut in the Magic Christmas Coconut Pie.

Looking for other favorite Southern pies? Check out the following pie recipes:

Southern Pumpkin Pie – It doesn’t get much more Southern than pumpkin pie. Pumpkin pie is a traditional pie served at both Thanksgiving and Christmas in homes all across the South.

Many Southerners even make their own Pumpkin Puree for pies.

Super Easy Strawberry Pie – This pie tastes a lot like the Strawberry Pie at Shoney’s restaurant. This is another really easy-to-make pie that tastes great. You’ll need fresh strawberries for this pie though. Frozen strawberries are not firm enough to make this style of strawberry pie.

Super Easy Key Lime Pie – If strawberries are not in season, then this is another super easy pie and can be made year round. The tart taste is terrific in the summer but also contrasts well with rich holiday dishes.
